Paglia means "straw" in Italian, which refers to the texture of this cheese once it matures. Originally, Paglierina makers placed the cheese on straw bales to help with the aging process. As a result, it made the crust of the cheese have a straw-like appearance.
Even though the practice of aging the cheese on straw bales is no longer dated, Paglierina still carries a dusty and wrinkly straw-colored rind. Paglierina has a light and creamy inner paste that gets more golden as it gets closer to the crust. The cheese taste may vary, depending on it age. As the aging period increase, Paglierina becomes fuller in taste and stronger in aroma with a hint of hazelnut.
Paglierina is typically flatter in shape, with a diameter of 10-15 cm and a very slight slope (up to 2 cm). The weight varies between 150 and 300 grams depending on the size of the shape
Storing and Serving Paglierina Cheese
It is recommended to keep cheese on a higher shelf of the refrigerator, far from food with strong odors, in order to avoid absorption of unwanted tastes and smells. In fact, the best option is to store them in a food container with lid to preserve cheese freshness and to protect from moisture, odors and possible moulding in the fridge. Freezing is not recommended.
